M\u00e1ra egy\u00e9rtelm\u0171 kedvenc T\u00f6r\u00f6korsz\u00e1gban \u00e9s ugyanannyira r\u00e9sze a hideg t\u00e9li napoknak, mint n\u00e1lunk a forralt bor.<\/p><p>Egy ital, melyet \u0151seink a r\u00e9g\u00e9szeti felt\u00e1r\u00e1sok alapj\u00e1n m\u00e1r i.e. 9. sz\u00e1zadban is gyakran fogyasztottak. \u00c9s hogy hogyan ker\u00fclt a mai T\u00f6r\u00f6korsz\u00e1g ter\u00fclet\u00e9re? Ennek a szinte puding\u00e1llag\u00fa, rendk\u00edv\u00fcl t\u00e1pl\u00e1l\u00f3 italnak sz\u00e1mos el\u0151\u00e1ll\u00edt\u00e1si m\u00f3dja ismert, a birodalom szinte minden n\u00e9pcsoportja m\u00e1sk\u00e9ppen k\u00e9sz\u00edtette. Az \u00f6rm\u00e9nyek \u00e9s a g\u00f6r\u00f6g sz\u00e1rmaz\u00e1s\u00fa t\u00f6r\u00f6k\u00f6k p\u00e9ld\u00e1ul hosszabb ideig ferment\u00e1lt\u00e1k a gabon\u00e1t, \u00edgy egy magasabb alkoholtartalm\u00fa italra tettek szert. A boza fogyaszt\u00e1s annyira n\u00e9pszer\u0171v\u00e9 v\u00e1lt az oszm\u00e1n id\u0151kben, hogy ut\u00f3bbi n\u00e9pcsoporthoz tartoz\u00f3k sz\u00e1mos \u201cboz\u00e1z\u00f3t\u201d nyitottak birodalomszerte, a 17. sz\u00e1zadban Evliya \u00c7elebi szerint csak Konstantin\u00e1polyban m\u00e1r 300 m\u0171k\u00f6d\u00f6tt \u00e9s t\u00f6bb mint 1000 lakosnak biztos\u00edtotta mindennapos meg\u00e9lhet\u00e9s\u00e9t a boza\u00e1rus\u00edt\u00e1s. Az els\u0151 boz\u00e1z\u00f3k megnyit\u00e1s\u00e1ra Szulejm\u00e1n szult\u00e1n adta ki az enged\u00e9lyt, ez bizony\u00edtja, hogy \u0151 is nagy kedvel\u0151je volt ennek a k\u00fcl\u00f6nleges arom\u00e1j\u00fa italnak. Olyannyira, hogy m\u00e9g a janics\u00e1rjainak is biztos\u00edtotta a bozafogyaszt\u00e1st, hiszen m\u00e1r akkor is ismert volt, hogy a boza magas kal\u00f3ria \u00e9s vitamintartalma miatt rendk\u00edv\u00fcl j\u00f3t tesz az eg\u00e9szs\u00e9gnek, f\u0151leg a t\u00e9li h\u00f3napokban. De nem \u00e1m csak a f\u00e9rfiaknak kedvez, n\u0151knek is kifejezetten aj\u00e1nlott napjainkban is, hiszen \u00e1ll\u00edt\u00f3lag seg\u00edti a kismam\u00e1k tejtermel\u00e9s\u00e9t.<\/p><p>Ugyanakkor term\u00e9szetesen nem mindegy, hogy mekkora alkoholtartalm\u00fa boz\u00e1r\u00f3l besz\u00e9l\u00fcnk. II. Szelim idej\u00e9ben ugyanis a legt\u00f6bb boza alkoholtartalma el\u00e9rte a 9%-ot, \u00edgy m\u00e1r vall\u00e1si szempontb\u00f3l teljesen elfogadhatatlann\u00e1 v\u00e1lt a fogyaszt\u00e1sa. A szult\u00e1n \u00edgy be is z\u00e1ratott sz\u00e1mos boz\u00e1z\u00f3t, valamint rendeletben meghat\u00e1rozta a boza lehets\u00e9ges maximum alkoholtartalm\u00e1t. Az \u00fan. tat\u00e1r boz\u00e1t pedig teljesen betiltott\u00e1k, mert mint kider\u00fclt, abba az \u201ceredeti recept\u201d szerint \u00f3piumot is kevertek. L\u00e1that\u00f3, hogy mindig a szult\u00e1nok vall\u00e1soss\u00e1g\u00e1t\u00f3l \u00e9s szigor\u00e1t\u00f3l f\u00fcgg\u00f6tt, hogy a boz\u00e1z\u00f3k m\u0171k\u00f6dhettek-e vagy sem \u00e9s v\u00e9g\u00fcl az is a szult\u00e1ni palot\u00e1ban d\u0151lt el, hogy melyik t\u00edpus v\u00e1lt a legn\u00e9pszer\u0171bb\u00e9. Hac\u0131 Sadik 1870-ben \u00e9rkezett Isztambulba \u00e9s az \u00e1ltala k\u00e9sz\u00edtett vil\u00e1gossz\u00edn\u0171, enyh\u00e9n \u00e9desk\u00e9s bozav\u00e1ltozat hamar n\u00e9pszer\u0171 lett a konstantin\u00e1polyiak k\u00f6r\u00e9ben. El\u0151sz\u00f6r az otthon k\u00e9sz\u00edtett boz\u00e1t egy v\u00e1llon hordozhat\u00f3 r\u00e9zkancs\u00f3b\u00f3l \u00e1rus\u00edtotta a v\u00e1ros parkjaiban, majd ahogy egyre ismertebb\u00e9 v\u00e1lt, 6 \u00e9v ut\u00e1n megnyitotta boltj\u00e1t az akkori Vefa negyedben, mely az arisztokrat\u00e1k \u00e9s b\u00fcrokrat\u00e1k lakhelye volt. Jelenleg az alap\u00edt\u00f3 \u00fckunok\u00e1i ugyanott gy\u00e1rtj\u00e1k a boz\u00e1t ugyanazon recept szerint. Az egyetlen v\u00e1ltoz\u00e1s csup\u00e1n annyi, hogy fahord\u00f3k helyett ma m\u00e1r m\u00e1rv\u00e1nyed\u00e9nyekben t\u00e1rolj\u00e1k, hogy azt \u00e1lland\u00f3 h\u0171v\u00f6s h\u0151m\u00e9rs\u00e9kleten tudj\u00e1k tartani.<\/p><p>Mindezek ellen\u00e9re a szigor\u00faan vall\u00e1sos emberek k\u00f6r\u00e9ben m\u00e1ig vita t\u00e1rgy\u00e1t k\u00e9pezi, hogy szabad-e boz\u00e1t fogyasztani, hiszen egy minim\u00e1lis alkoholtartalma eg\u00e9sz biztosan van, ez a ferment\u00e1l\u00e1s miatt elker\u00fclhetetlen. A legnevesebb bozagy\u00e1rt\u00f3 c\u00e9gek azzal \u00e9rvelnek term\u00e9k\u00fck mellett, hogy ekkora alkoholtartalma a joghurtnak vagy a kef\u00edrnek is van. S\u0151t a fent eml\u00edtett alb\u00e1n csal\u00e1d laborat\u00f3riumi vizsg\u00e1latot is csin\u00e1ltatott, ahol kimutatt\u00e1k, hogy az \u0151 \u00e1ltaluk k\u00e9sz\u00edtett boza alkoholtartalma mind\u00f6ssze 0,065%, ehhez k\u00e9pest szerint\u00fck egy kelesztett keny\u00e9rben t\u00f6bb az alkohol. \u00c1ltal\u00e1ban elmondhat\u00f3, hogy m\u00e1rk\u00e1j\u00e1t\u00f3l f\u00fcgg\u0151en a ma \u00e1rus\u00edtott k\u00fcl\u00f6nb\u00f6z\u0151 boz\u00e1k alkoholtartalma 0,06 \u00e9s 3% k\u00f6z\u00f6tt v\u00e1ltozik.<\/p><p>De azt hiszem, nek\u00fcnk ez mindegy is!
