P\u00e9ld\u00e1ul, hogy mit is jelent a lahmacun, mi\u00f3ta essz\u00fck \u00e9s mi k\u00f6ze van a tini nindzsa tekn\u0151c\u00f6kh\u00f6z?<\/p><p dir=\"ltr\">Sz\u00f3val kezdj\u00fck ott, hogy szerintem alapvet\u0151en teljesen felesleges azon gondolkodni, hogy honnan ered a lahmacun, ma melyik n\u00e9p \u00e9rzi saj\u00e1tj\u00e1nak \u00e9s pr\u00f3b\u00e1lja lev\u00e9detni, hisz tulajdonk\u00e9ppen mir\u0151l is van sz\u00f3? Egy lapos t\u00e9szt\u00e1r\u00f3l, amire f\u0171szeres h\u00fast tesznek \u00e9s megs\u00fctik. Nem hangzik t\u00fal egyedinek, mert ez ak\u00e1r lehetne melegszendvics, pizza vagy ak\u00e1r langall\u00f3 is. Na, a v\u00e9g\u00e9n szerintem T\u00f6r\u00f6korsz\u00e1g nem a ter\u00fcleti ig\u00e9nyei miatt nem fog belemenni a a ciprusi k\u00e9rd\u00e9s b\u00e1rmif\u00e9le konszolid\u00e1ci\u00f3j\u00e1ba, hanem a lahmacun okozta s\u00e9rtetts\u00e9g miatt! \ud83d\ude42 Egy\u00e9bk\u00e9nt a k\u00e9rd\u00e9s megv\u00e1laszol\u00e1sa, hogy melyik \u00e9tel kihez tartozik igaz\u00e1n neh\u00e9znek bizonyul: a t\u00f6r\u00f6k\u00f6k hi\u00e1ba v\u00e9dett\u00e9k le a baklav\u00e1t saj\u00e1t tradicion\u00e1lis \u00e9dess\u00e9gk\u00e9nt, az Eur\u00f3pai Uni\u00f3ban sz\u00e1mos \u00fczlet polc\u00e1n tal\u00e1lunk baklav\u00e1t g\u00f6r\u00f6g z\u00e1szl\u00f3val, \u201chagyom\u00e1nyos g\u00f6r\u00f6g s\u00fctem\u00e9ny\u201d felirattal.. Eredetileg a t\u00e9szta \u00e9leszt\u0151 n\u00e9lk\u00fcl k\u00e9sz\u00fclt kifejezetten az\u00e9rt, hogy s\u00fct\u00e9s k\u00f6zben se vastagodjon meg, mert itt a c\u00e9l az, hogy egy ropog\u00f3s hajsz\u00e1lv\u00e9kony t\u00e9szt\u00e1t kapjunk v\u00e9geredm\u00e9nyk\u00e9nt, ne pedig az egyik j\u00f3l ismert pizzal\u00e1nc 5cm vastag tepsis pizz\u00e1j\u00e1hoz hasonl\u00f3 valamit. (Ennek ellen\u00e9re, ak\u00e1rh\u00e1ny receptet n\u00e9ztem meg, mindegyik \u00e9leszt\u0151s t\u00e9szt\u00e1r\u00f3l \u00edrt..)<\/p><p dir=\"ltr\">Erre a t\u00e9szt\u00e1ra ker\u00fcl r\u00e1 egy rendk\u00edv\u00fcl egyszer\u0171en \u00e9s gyorsan elk\u00e9sz\u00edthet\u0151 massza, ami dar\u00e1lt h\u00fas, paradicsom(s\u0171r\u00edtm\u00e9ny), paprikapaszta \u00e9s f\u0171szerek \u00f6sszedar\u00e1lt kever\u00e9k\u00e9b\u0151l \u00e1ll. Sumac, bors, hagyom\u00e1nyos morzsolt olajos pirospaprika,.. ezek azok a f\u0171szerek, amik a lahmacun jellegzetes \u00edz\u00e9t adj\u00e1k \u00e9s amelyekkel ez az egyszer\u0171 \u00e9tek ki\u00e9rdemelte, hogy beker\u00fclj\u00f6n a Lonely Planet k\u00f6nyvsorozat \u201cA vil\u00e1g legjobb f\u0171szeres \u00e9telei\u201d c\u00edm\u0171 kiadv\u00e1ny\u00e1ba.<\/p><p dir=\"ltr\">Miut\u00e1n ezzel megkent\u00e9k a szuperv\u00e9konyra kiny\u00fajtott t\u00e9szt\u00e1t, a hagyom\u00e1nyos m\u00f3dszerek alapj\u00e1n mehet a t\u00e9gl\u00e1b\u00f3l k\u00e9sz\u00fclt kemenc\u00e9be, ahol pillanatok alatt ropog\u00f3ss\u00e1 s\u00fcl. (M\u00e9rete \u00e1ltal\u00e1ban egy nagy lapost\u00e1ny\u00e9rnyi, de ma m\u00e1r k\u00e9sz\u00edtenek eg\u00e9szen kicsike, teny\u00e9rnyi lahmacunt is, melynek a beceneve\u00a0f\u0131nd\u0131k lahmacun (mogyor\u00f3 lahmacun), mely val\u00f3sz\u00edn\u0171leg arra utal, hogy akkora kis t\u00e9sztagoly\u00f3b\u00f3l ny\u00fajtj\u00e1k, mint egy mogyor\u00f3.)<\/p><p dir=\"ltr\">Ezut\u00e1n pedig j\u00f6het r\u00e1 egy kis citroml\u00e9 \u00e9s sok petrezselyem \u00e9s\/vagy hagyma, fokhagyma, rukkola, koriander.. v\u00e1rosa, embere v\u00e1logatja! L\u00e9nyeg, hogy ne legyen sok a z\u00f6ldf\u00e9le rajta, ne \u00f6nt\u00f6zz\u00fck meg plusz ol\u00edvaolajjal se, mert ez mind \u201celviszi\u201d az \u00edz\u00e9t.<\/p><p dir=\"ltr\">T\u00f6r\u00f6korsz\u00e1gban, els\u0151sorban \u015eanl\u0131urfa v\u00e1ros\u00e1hoz k\u00f6t\u0151dik, a legend\u00e1k szerint itt k\u00e9sz\u00edtik a legautentikusabb lahmacunt. Itt hagym\u00e1val eszik vagy n\u00e9ha grillezett padlizs\u00e1nnal, de Gaziantepben p\u00e9ld\u00e1ul fokhagym\u00e1san. Ha Isztambulban j\u00e1runk, akkor pedig b\u00e1rmi el\u0151fordulhat: tal\u00e1lkozhatunk gr\u00e1n\u00e1talm\u00e1b\u00f3l k\u00e9sz\u00fclt balzsamecetes vagy piszt\u00e1ci\u00e1s lahmacunnal is.<\/p><p dir=\"ltr\">Na de m\u00e9g egy \u00e9rdekes sztorit meg kell osztanom veletek, m\u00e9g pedig, hogy milyen ravasz cselsz\u00f6v\u00e9ssel lett az olasz pizza legal\u00e1bb annyira n\u00e9pszer\u0171 T\u00f6r\u00f6korasz\u00e1gban, mint t\u00f6r\u00f6k v\u00e1ltozata. 1989-et \u00edrunk, mikor az els\u0151 pizza\u00e1rusok megjelentek T\u00f6r\u00f6korsz\u00e1gban. Na de a pizz\u00e1sok nem adt\u00e1k \u00e1m fel ilyen k\u00f6nnyen. 1991-ben egy mesefilmet mutattak be Amerik\u00e1ban, amit valamilyen furcsa okn\u00e1l fogva a piaci \u00e1r 10%-\u00e1\u00e9rt aj\u00e1nlottak fel egy t\u00f6r\u00f6k kereskedelmi csatorn\u00e1nak. A csatorna azonnal megvette \u00e9s sug\u00e1rozni is kezdte a mes\u00e9t, a hozz\u00e1 kapcsol\u00f3d\u00f3 rekl\u00e1maj\u00e1nd\u00e9kok pedig hatalmas bev\u00e9telt hoztak. Nem sok id\u0151nek kellett eltelnie \u00e9s egyszer csak a t\u00f6r\u00f6k \u00e9desany\u00e1k azon kapt\u00e1k magukat, hogy a gyerekeik pizz\u00e1t k\u00e9rnek vacsor\u00e1ra. Mivel anyuka nem tudta, hogyan kell pizz\u00e1t csin\u00e1lni, viszont a kereslet pedig elk\u00e9peszt\u0151en n\u0151tt, hirtelen megjelentek a pizza\u00e1rusok \u00e9s a lahmacunk\u00e9sz\u00edt\u0151k legnagyobb b\u00e1nat\u00e1ra m\u00e1r az egyetemist\u00e1k is pizz\u00e1t ettek \u00fatk\u00f6zben \u00f3r\u00e1ra szaladva vagy este a koliszob\u00e1ban. \u00c9s vajon melyik pizzal\u00e1nc nyitotta meg \u00fajra \u00e9ttermeit T\u00f6r\u00f6korsz\u00e1g-szerte? Nem \u00edrom le, de azt hiszem m\u00e1r mindenki kital\u00e1lta (fentebb az 5cm vastag pizz\u00e1jukkal m\u00e1r utaltam r\u00e1juk).<\/p><p dir=\"ltr\">Azt hiszem, hogy ma m\u00e1r t\u00fall\u00e9pt\u00fcnk a szok\u00e1sos k\u00f6nnyed gasztrot\u00e9m\u00e1n \u00e9s belel\u00e1ttunk a marketing s\u00f6t\u00e9t bugyraiba is! \ud83d\ude42<\/p><p dir=\"ltr\">\u00dagyhogy nem maradt m\u00e1s h\u00e1tra mint a recept. Tess\u00e9k elolvasni, hazamenni \u00e9s a ma esti pizza helyett ink\u00e1bb egy lahmacunt s\u00fctni!
