Az elm\u00falt \u00e9vezredek sor\u00e1n t\u00f6bb mint 25 civiliz\u00e1ci\u00f3 fordult meg ezen a f\u00f6ld\u00f6n, melyek kult\u00far\u00e1j\u00e1nak szerves r\u00e9sze volt a sz\u0151l\u0151termeszt\u00e9s \u00e9s a borfogyaszt\u00e1s. Ez a szok\u00e1s csak akkor v\u00e1ltozott meg, mikor az iszl\u00e1m teret nyert Anat\u00f3li\u00e1ban is, melynek k\u00f6vetkezt\u00e9ben a borfogyaszt\u00e1st betiltott\u00e1k vagy legal\u00e1bbis jelent\u0151sen korl\u00e1tozt\u00e1k. Az anat\u00f3liai bortermeszt\u00e9s egyetlen szerencs\u00e9je, hogy az alkoholtilalom nem hozta mag\u00e1val a sz\u0151l\u0151\u00fcltetv\u00e9nyek kiv\u00e1g\u00e1s\u00e1t, ennek k\u00f6sz\u00f6nhet\u0151, hogy az 1200 k\u00fcl\u00f6nb\u00f6z\u0151 \u0151shonos anat\u00f3liai sz\u00f3l\u0151fajt\u00e1b\u00f3l m\u00e9g a mai napig megtal\u00e1lhat\u00f3ak olyan kiemelked\u0151 fajt\u00e1k, mint p\u00e9ld\u00e1ul a Kalecik Karas\u0131. A bork\u00e9sz\u00edt\u00e9s mindezek ellen\u00e9re csak a 90\u2019es \u00e9vekben kezdett el \u00fajj\u00e1\u00e9ledni \u00e9s az\u00f3ta is t\u00f6bbsz\u00e1z t\u00f6r\u00f6k \u00e9s nemzetk\u00f6zi szakember dolgozik azon, hogy a t\u00f6r\u00f6k bor vil\u00e1gszinten is h\u00edrn\u00e9vre tegyen szert.<\/p><p>Ennek a mozgalomnak az egyik k\u00e9pvisel\u0151je a Vinkara bor\u00e1szat, mely Bels\u0151-Anat\u00f3li\u00e1ban Kalecik nev\u0171 telep\u00fcl\u00e9s k\u00f6zel\u00e9ben \u00e9lesztette \u00fajj\u00e1 a bork\u00e9sz\u00edt\u00e9st 2003-ban. El\u0151sz\u00f6r egy 22 hekt\u00e1ros ter\u00fcletet v\u00e1s\u00e1roltak meg, majd ezt b\u0151v\u00edtett\u00e9k tov\u00e1bbi 36 hekt\u00e1rral, mely ter\u00fcleteken 2008-ban meg is t\u00f6rt\u00e9nhetett az els\u0151 arat\u00e1s. 2010-re m\u00e9g 9 hekt\u00e1rral b\u0151v\u00fclt a ter\u00fclet \u00e9s elindult egy nagyvolumen\u0171 marketingtev\u00e9kenys\u00e9g is, mely bevezette az els\u0151 Vinkara borokat a piacra. Jelenleg 104 hekt\u00e1ron termesztenek 5 fajta \u0151shonos, anat\u00f3liai sz\u0151l\u0151fajt\u00e1t, a Kalecik Karas\u0131t, az \u00d6k\u00fczg\u00f6z\u00fct, Bo\u011fazker\u00e9t, az Emirt \u00e9s a Narinc\u00e9t.<\/p><p>Figyelemre \u00e9s elismer\u00e9sre m\u00e9lt\u00f3, amit a t\u00f6r\u00f6k, \u0151shonos sz\u0151l\u0151kb\u0151l k\u00e9sz\u00edtett borok\u00e9rt tesznek, hiszen az amerikai piacra is siker\u00fclt bet\u00f6rni\u00fck \u00e9s sz\u00e1mos nemzetk\u00f6zi d\u00edjjal b\u00fcszk\u00e9lkedhetnek m\u00e1r.<\/p><p>2009-ben egy nagy kih\u00edv\u00e1snak tettek eleget, mikor is r\u00e1sz\u00e1nt\u00e1k magukat, hogy elk\u00e9sz\u00edts\u00e9k els\u0151 pezsg\u0151j\u00fcket, melynek sor\u00e1n az igazi champagne-i elj\u00e1r\u00e1st k\u00f6vett\u00e9k. A pezsg\u0151nek ugyanis k\u00e9t elk\u00e9sz\u00edt\u00e9si fajt\u00e1ja van, az egyik amikor a m\u00e1sodik ferment\u00e1ci\u00f3s szakaszra m\u00e1r a palackban ker\u00fcl sor, a m\u00e1sik pedig, amikor a bubor\u00e9kokat okoz\u00f3 karbondioxid teljes m\u00e9rt\u00e9kben a tart\u00e1lyban keletkezik \u00e9s csak ezut\u00e1n ker\u00fcl palackoz\u00e1sra az ital. Ut\u00f3bbi az olcs\u00f3bbik \u00e9s kev\u00e9sb\u00e9 min\u0151s\u00e9gi pezsg\u0151k\u00e9sz\u00edt\u00e9si elj\u00e1r\u00e1s. Azonban a Vinkara bor\u00e1szat az els\u0151 elj\u00e1r\u00e1st v\u00e1lasztotta, ez biztos\u00edtotta, hogy igen sz\u00e9p, egym\u00e1st kieg\u00e9sz\u00edt\u0151 egy\u00fcttest alkotnak az ital \u00e9s a bubor\u00e9kok. 12 h\u00f3napig \u00e9rlelt\u00e9k az 6300 palackba sz\u00e9toszott nekt\u00e1rt, melynek m\u00e9g egy eml\u00edt\u00e9sre m\u00e9lt\u00f3 k\u00fc\u00f6nlegess\u00e9ge az, hogy piros sz\u0151l\u0151b\u0151l k\u00e9sz\u00fclt, m\u00e9gis feh\u00e9r sz\u00edn\u0171 lett.
