A desszertekre \u00e9s italokra 1-1 k\u00fcl\u00f6n bejegyz\u00e9st fogok sz\u00e1nni.<\/p><p>Kezdj\u00fck h\u00e1t a z\u00f6lds\u00e9gekkel!<\/p><p>Az oszm\u00e1n konyha \u00e9s ennek k\u00f6vetkezt\u00e9ben a mai modern t\u00f6r\u00f6k konyha is elk\u00e9peszt\u0151 gazdags\u00e1got mutat ha a meleg \u00e9s hideg z\u00f6lds\u00e9g\u00e9telek k\u00e9sz\u00edt\u00e9s\u00e9re ker\u00fcl a sor. Az oszm\u00e1n kori konyh\u00e1ban csak padlizs\u00e1nb\u00f3l negyven fajta \u00e9telt jegyeztek a szak\u00e1csk\u00f6nyvek.<\/p><p>A\u00a0<strong>sz\u00e1r\u00edtott z\u00f6lds\u00e9gek<\/strong>\u00a0(bab, az okra, a lencse, bors\u00f3 \u00e9s csicseribors\u00f3) fant\u00e1ziad\u00fas felhaszn\u00e1l\u00e1sa volt az egyik els\u0151 meglepet\u00e9s sz\u00e1momra a t\u00f6r\u00f6k konyh\u00e1val kapcsolatban. Az ezekkel a z\u00f6lds\u00e9gekkel egy\u00fcttf\u0151z\u00f6tt h\u00fas volt az els\u0151, ami az asztalra ker\u00fclt, ezt k\u00f6vett\u00e9k csak k\u00e9s\u0151bb a friss, ol\u00edvaolajjal k\u00e9sz\u00edtett z\u00f6lds\u00e9gek. A babos \u00e9telek k\u00f6z\u00fcl \u00e9rdemes kiemelni a\u00a0<strong>kuru fas\u00fclye<\/strong>\u00a0(kuru fasz\u00fclje, azaz sz\u00e1r\u00edtott bab) nev\u0171t \u00e9telt, ami feh\u00e9r babb\u00f3l f\u0151z\u00f6tt paradicsomos, leveses egyt\u00e1l\u00e9tel, \u00e9s b\u00e1r egy nagyon egyszer\u0171 \u00e9telr\u0151l van sz\u00f3, m\u00e9gis az egyik legn\u00e9pszer\u0171bb v\u00e1laszt\u00e1s, ha gyorsan j\u00f3l szeretn\u00e9nk lakatni a hasunkat valami meleg \u00e9tellel.<\/p><p>\u00c9rdemes itt m\u00e9g megeml\u00edteni a sz\u00e1r\u00edtott padlizs\u00e1nt, t\u00f6k\u00f6t vagy paprik\u00e1t, amit sok helyen l\u00e1thatunk felf\u0171zve a t\u00f6r\u00f6k boltokban \u00e9s azt hihetn\u00e9nk r\u00f3la, hogy milyen sz\u00e9p sz\u00ednes dekor\u00e1ci\u00f3, pedig tulajdonk\u00e9ppen arra v\u00e1r, hogy valakinek megakadjon rajta a szeme, hazavigye, megt\u00f6ltse, megf\u0151zze \u0151t \u00e9s \u00edgy \u00fajra \u00e9letre kelve, f\u0171szereket mag\u00e1ba sz\u00edvva tetszeleghessen a csal\u00e1di asztalon. Itt azonban eg\u00e9sz m\u00e1sr\u00f3l van sz\u00f3. Ahogy n\u00e1lunk a f\u0151zel\u00e9kek egy k\u00fcl\u00f6n kateg\u00f3ri\u00e1t alkotnak \u00e9s v\u00e9gtelen sok vari\u00e1ci\u00f3 l\u00e9tezik bel\u0151l\u00fck, \u00fagy a t\u00f6r\u00f6k\u00f6kn\u00e9l a zeytinya\u011fl\u0131 (zejtinjaali, azaz ol\u00edvaolajos) \u00e9telekre ugyanez igaz. Gyakorlatilag szinte b\u00e1rmilyen z\u00f6lds\u00e9gb\u0151l elk\u00e9sz\u00edthet\u0151 fog\u00e1s ez. A z\u00f6lds\u00e9get ol\u00edvaolajban f\u0151zik meg, majd szobah\u0151m\u00e9rs\u00e9kleten t\u00e1lalj\u00e1k. Term\u00e9szetesen a legjobb, ha mindig az \u00e9vszaknak megfelel\u0151 z\u00f6lds\u00e9gekb\u0151l k\u00e9sz\u00edtik, \u00edgy ker\u00fcl az asztalra t\u00e9len zeller vagy p\u00f3r\u00e9hagyma, ny\u00e1ron pedig cukk\u00edni, artics\u00f3ka \u00e9s sok minden m\u00e1s. \u00cdzes\u00edt\u00e9sk\u00e9nt mind\u00f6ssze friss kaprot \u00e9s citromot haszn\u00e1lnak. \u00a0<\/p><p>Kezdt\u00fck a megf\u0151z\u00f6tt sz\u00e1r\u00edtott z\u00f6lds\u00e9gekkel, ezt k\u00f6vett\u00e9k a szobah\u0151m\u00e9rs\u00e9kleten t\u00e1lalt ol\u00edvaolajos \u00e9telek, most j\u00f6hetnek a\u00a0<strong>hideg sal\u00e1t\u00e1k<\/strong>, amik n\u00e9ha tal\u00e1n elhanyagolt kateg\u00f3ri\u00e1nak t\u0171nhetnek, pedig a t\u00f6r\u00f6k konyha egyik fontos alkot\u00f3elem\u00e9nek sz\u00e1m\u00edtanak. El\u0151sz\u00f6r is itt van a \u00e7oban (csoban, azaz p\u00e1sztor) sal\u00e1ta, mely apr\u00f3ra v\u00e1gott paradicsom, uborka \u00e9s paprika kever\u00e9ke ol\u00edvaolajjal \u00e9s a kihagyhatatlan nar ek\u015fisivel (nar eksiszi, azaz gr\u00e1n\u00e1talma ecet) meg\u00f6nt\u00f6zve. Ut\u00f3bbi minden t\u00f6r\u00f6k h\u00e1ziasszony konyh\u00e1j\u00e1ban megtal\u00e1lhat\u00f3, kihagyhatatlan \u00edzes\u00edt\u0151je sal\u00e1t\u00e1knak, de ak\u00e1r h\u00fasoknak is.\u00a0Nem felejtkezhet\u00fcnk el a petrezselyemr\u0151l sem, melyet a t\u00f6r\u00f6k\u00f6k \u00fagy esznek sal\u00e1tak\u00e9nt, mint mi a fejessal\u00e1t\u00e1t. Az Ezme salatas\u0131 pedig k\u00fcl\u00f6n-k\u00fcl\u00f6n apr\u00f3ra dar\u00e1lt paradicsomb\u00f3l, paprik\u00e1b\u00f3l, hagym\u00e1b\u00f3l, ment\u00e1b\u00f3l \u00e9s petrezselyemb\u0151l k\u00e9sz\u00fcl, melyeket v\u00e9g\u00fcl gr\u00e1n\u00e1talmaecettel, ol\u00edvaolajjal, paprikakr\u00e9mmel \u00e9s sumac nev\u0171 f\u0171szerrel \u00edzes\u00edt\u00fcnk.<\/p><p>Nem utols\u00f3 sorban nem szabad elfelejtkezn\u00fcnk a\u00a0<strong>dolma<\/strong>\u00a0\u00e9s\u00a0<strong>sarma<\/strong>\u00a0(szarma) nev\u0171 \u00e9telek csoportjair\u00f3l sem, melyek t\u00f6lt\u00f6ttet , illetve feltekertet jelentenek. A magyarok szempontj\u00e1b\u00f3l ezek az \u00e9telek k\u00fcl\u00f6n\u00f6sen fontosak, hiszen sokszor felmer\u00fcl a k\u00e9rd\u00e9s, hogy kin\u00e9l volt el\u0151bb t\u00f6lt\u00f6tt paprika \u00e9s t\u00f6lt\u00f6tt sz\u0151l\u0151lev\u00e9l, n\u00e1luk vagy n\u00e1lunk? A t\u00f6r\u00f6k\u00f6kn\u00e9l a fenn eml\u00edtett \u00e9telek k\u00e9t k\u00fcl\u00f6n csoportot alkotnak, n\u00e1lunk nincs ilyen elk\u00fcl\u00f6n\u00edt\u00e9s, hiszen a paprika \u00e9s a k\u00e1poszta is t\u00f6lt\u00f6tt. Term\u00e9szetesen az id\u0151 m\u00fal\u00e1s\u00e1val mindk\u00e9t n\u00e9p konyh\u00e1ja sokat v\u00e1ltozott, \u00edgy ott a t\u00f6lt\u00f6tt sz\u0151l\u0151lev\u00e9l lett a legjellegzetesebb \u00e9telek egyike, m\u00edg n\u00e1lunk t\u00f6lt\u00f6tt fajt\u00e1b\u00f3l a paprika, felcsavart fajt\u00e1b\u00f3l a k\u00e1poszta v\u00e1lt a legn\u00e9pszer\u0171bb\u00e9. A kapcsolatot azonban az eg\u00e9sz biztosan jelzi, hogy az Alf\u00f6ld\u00f6n m\u00e9g sok hely\u00fctt sz\u00e1rm\u00e1nak h\u00edvj\u00e1k a t\u00f6lt\u00f6tt k\u00e1poszt\u00e1t \u00e9s b\u00e1r itthon annyira nem elterjedt, de igenis l\u00e9tezik t\u00f6lt\u00f6tt sz\u0151l\u0151lev\u00e9l. M\u00e1r a 16. sz\u00e1zadban az akkori magyar lakoss\u00e1g k\u00f6r\u00e9ben a h\u00fasos k\u00e1poszta volt az egyik legn\u00e9pszer\u0171bb \u00e9tek. Ennek a t\u00f6lt\u00f6tt, illetve jobban mondva feltekert v\u00e1ltozat\u00e1t a t\u00f6r\u00f6k\u00f6kt\u0151l vett\u00e9k \u00e1t mind a balk\u00e1ni n\u00e9pek, mind a magyarok a 17-18. sz\u00e1zadban. Melyek is a legnagyobb k\u00fcl\u00f6nbs\u00e9gek a k\u00e9t orsz\u00e1g sz\u00e1rm\u00e1i \u00e9s dolm\u00e1i k\u00f6z\u00f6tt? N\u00e1lunk els\u0151sorban savany\u00edtott k\u00e1poszt\u00e1t haszn\u00e1lnak, nem jellemz\u0151 az egzotikus f\u0171szerek haszn\u00e1lata, legink\u00e1bb csak a bors\u00e9, k\u00f6m\u00e9ny\u00e9 \u00e9s pirospaprik\u00e1\u00e9, a diszn\u00f3h\u00fas \u00e9s a zs\u00edr pedig elmaradhatatlan kell\u00e9ke az igaz\u00e1n \u00edzes k\u00e1poszt\u00e1nak. Legyen ak\u00e1r sz\u00f3 szalonn\u00e1r\u00f3l, kolb\u00e1szr\u00f3l vagy dar\u00e1lt h\u00fasr\u00f3l. Ezzel szemben a t\u00f6r\u00f6k\u00f6kn\u00e9l ha h\u00fas ker\u00fcl bele, az \u00e1ltal\u00e1ban borj\u00fa vagy b\u00e1r\u00e1ny, de sz\u00e9les k\u00f6rben elterjedtek a veget\u00e1ri\u00e1nus v\u00e1ltozatok is, melyekbe els\u0151sorban rizs vagy bulgur ker\u00fcl, f\u0171szerez\u00e9s\u00fck pedig igaz\u00e1n \u00edzes.
