Az elm\u00falt h\u00e1rom napban ugyanis Gaziantep v\u00e1rosa mutatkozott be a t\u00f6r\u00f6k kultur\u00e1lis k\u00f6zpontban, \u00e9s erre a programra t\u00f6bb mester is \u00e9rkezett egyenesen T\u00f6r\u00f6korsz\u00e1gb\u00f3l.<\/p>

Gaziantep v\u00e1rosa, mely a sz\u00edriai hat\u00e1rn\u00e1l fekszik, T\u00f6r\u00f6korsz\u00e1g egyik gasztron\u00f3miai fellegv\u00e1ra. Itt ehetj\u00fck a legjobb kebabokat, a legcsod\u00e1sabban f\u0171szerezett h\u00fas\u00e9teleket, \u00e9s nem utols\u00f3sorban minden valamireval\u00f3 baklavak\u00e9sz\u00edt\u0151 mester maga vagy felmen\u0151i is eg\u00e9szen biztos, hogy gaziantepi sz\u00e1rmaz\u00e1s\u00faak. A t\u00f6r\u00f6k \u00e9dess\u00e9gek egyik f\u0151 hozz\u00e1val\u00f3ja is err\u0151l a v\u00e1rosr\u00f3l kapta a nev\u00e9t. A piszt\u00e1cia, azaz antepf\u0131st\u0131\u011f\u0131 (antep fisztii) sz\u00f3 szerint azt jelenti, hogy antepi mogyor\u00f3. Az\u00e9rt err\u0151l a v\u00e1rosr\u00f3l nevezt\u00e9k el, mert T\u00f6r\u00f6korsz\u00e1gban itt alap\u00edtott\u00e1k az els\u0151 piszt\u00e1cia feldolgoz\u00f3 \u00fczemeket, \u00e9s innen terjesztett\u00e9k el az eg\u00e9sz orsz\u00e1gban, majd tov\u00e1bb k\u00fclf\u00f6ldre. A f\u0151 term\u0151vid\u00e9k azonban \u015eanl\u0131urfa v\u00e1ros\u00e1hoz k\u00f6thet\u0151.<\/p>

Mehmet usta (vagyis mester), aki m\u00e1r 35 \u00e9ve ny\u00fajtja \u00e9s t\u00f6lti a katmert\u00e9szt\u00e1t, \u00e9desapj\u00e1t\u00f3l Zekeriya ust\u00e1t\u00f3l tanulta a mesters\u00e9get. C\u00e9lja, hogy az eg\u00e9sz vil\u00e1g megismerje ezt a finoms\u00e1got. A katmer t\u00e9szt\u00e1j\u00e1hoz s\u00f3t, lisztet \u00e9s vizet kell \u00f6sszegy\u00farni, kis gomb\u00f3cokra szaggatni \u00e9s h\u0171t\u0151ben egy napon \u00e1t \u00e1llni hagyni. Ezut\u00e1n beolajozott k\u00e9zzel, olajos asztalon vagy ny\u00fajt\u00f3deszk\u00e1n, el\u0151sz\u00f6r a tenyer\u00fcnkkel kicsit ki kell lapogatni, majd ny\u00fajt\u00f3deszk\u00e1val nagyj\u00e1b\u00f3l a k\u00e9tszeres\u00e9re ny\u00fajtani. Ezut\u00e1n j\u00f6n a tr\u00fckk, ugyanis k\u00e9t k\u00e9zzel meg kell fogni a t\u00e9szt\u00e1t \u00e9s egy (sok gyakorl\u00e1st ig\u00e9nyl\u0151) k\u00f6rk\u00f6r\u00f6s mozdulattal kell felkapni \u00e9s megint leter\u00edteni, amit\u0151l mindig ny\u00falik egy kicsit. Ezt annyiszor kell megcsin\u00e1lni, hogy eg\u00e9szen pap\u00edrv\u00e9konys\u00e1g\u00fara ny\u00faljon a t\u00e9szta. Ezt k\u00f6vet\u0151en t\u00f6ltel\u00e9kk\u00e9nt Gaziantepben k\u00e9sz\u00edtett s\u0171r\u0171 tejsz\u00ednt tesznek bele (mivel itthon ilyen, szinte tejf\u00f6l s\u0171r\u0171s\u00e9g\u0171 tejsz\u00edn nincs, ez\u00e9rt hosszan f\u0151tt tejbergr\u00edzt haszn\u00e1ltunk). Erre ker\u00fcl r\u00e1 a cukor \u00e9s b\u0151s\u00e9gesen az \u0151r\u00f6lt piszt\u00e1cia. Ezut\u00e1n a t\u00e9szt\u00e1t n\u00e9gybe hajtj\u00e1k \u00e9s megs\u00fctik. Nek\u00fcnk sajnos nem \u00e1llt rendelkez\u00e9s\u00fcnkre \u00e9p\u00edtett kemence, ez\u00e9rt maradt a villanys\u00fct\u0151, amiben kb 10 perc alatt k\u00e9szre s\u00fclt az \u00e9dess\u00e9g \u00e9s m\u00e9g egy kis piszt\u00e1ci\u00e1val megsz\u00f3rva azonnal fogyaszthat\u00f3 is volt! Mennyei!!!<\/p>

B\u00e1r m\u00e9g az els\u0151, \u00e1ltalam szervezett gasztro t\u00far\u00e1n t\u00fal sem vagyok, arra m\u00e1r \u00edg\u00e9retet tettem, hogy egy hasonl\u00f3 tematikus utat eg\u00e9sz biztosan szervezek Gaziantepbe a k\u00f6zelj\u00f6v\u0151ben, nagy sajn\u00e1latomra az utaz\u00e1si irod\u00e1k aj\u00e1nlataib\u00f3l kimarad ez a rendk\u00edv\u00fcl gazdag kultur\u00e1lis \u00f6r\u00f6ks\u00e9ggel rendelkez\u0151 v\u00e1ros. Mi sem lehetne erre jobb alkalom, mint a legk\u00f6zelebb j\u00f6v\u0151 \u00e9v szeptember\u00e9ben megrendez\u00e9sre ker\u00fcl\u0151 piszt\u00e1cia fesztiv\u00e1l!
